Easy Cheeseburger Soup

Ingredients

  • ½ pound ground beef
  • 4 tablespoons butter divided
  • ¾ cup onion chopped
  • ¾ cup carrot shredded
  • 1 bell pepper diced
  • ¾ cup celery diced
  • 1 teaspoon basil dried
  • 1 teaspoon dried parsley flakes
  • 3 cups chicken broth
  • 2 to 4 cups Velveeta cheese shredded, or cheddar cheese
  • 1-1/2 cups milk whole
  • ¾ teaspoon salt
  • ¼ to ½ teaspoon black pepper
  • ¼ cup sour cream
  • 4-6 Bacon strips, crunchy, crumbled, to garnish

Instructions

  1. In a large saucepan over medium heat, melt 1 tablespoon butter over medium heat.
  2. Add ground beef - cook and crumble beef until no longer pink. 
  3. Remove beef when browned, set aside. Do not drain fat. Add vegetables to pan and cook until browned, about 8 minutes, stirring frequently to prevent burning. When lightly browned, stir beef back in.
  4. Add broth; bring to a boil.
  5. Reduce heat to low.
  6. Stir in cheese, milk, salt and pepper; cook until cheese melts.
  7. Remove from heat; blend in sour cream.
