Ingredients
- 1 lb. ground beef I used 96/4
- 1/2 cup diced white onion (70g)
- 1/2 cup sugar-free ketchup (120g)
- 2 Tbsp yellow mustard (30g)
- 2 Tbsp sweet relish (30g)
- 1 cup shredded cheddar cheese (112g)
- 12 fajita size flour tortillas I used carb balance
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and/or spray with cooking spray.
- Cook beef and diced onions in a skillet over medium heat until the meat is brown. Crumble the meat as you go, then remove from heat and drain any remaining grease.
- Stir in the ketchup, mustard and sweet relish. Taste and season with salt and pepper to taste.
- Then stir in the cheese.
- Place the tortillas on a plate and cover with a damp paper towel and microwave for 30 seconds.
- Scoop 2-3 Tbsp (~54g) of the beef mixture onto one side of the tortilla and roll it up tight. Then place the taquitos seam-side down with space in between them on the baking sheet. Repeat for all the tortillas.
- Spray cooking spray all over the top (this helps them crisp up). Then bake for 10 minutes or until golden brown.
- Serve with special sauce, ketchup or any other sauce that sounds good and enjoy!

Notes
- How To Freeze
- Reheating Tips!
- You can reheat taquitos in the microwave, oven or air fryer. To reheat in the oven just place them on a baking sheet at 350° for about 10 minutes. In the air fryer you can set it to 350°F, they should only take 4-5 minutes to heat through.
- Allow taquitos to cool to room temperature.
- Line a baking sheet with parchment paper (or plate if you don’t have one that will fit in your freezer).
- Place the taquitos on the baking sheet so they are not touching (so they don’t freeze sticking together).
- Then freeze for at least an hour.
- Once frozen, transfer to an airtight freezer-safe ziploc bag.
