Easy Cheesecake Chimichangas, sometimes called Taquitos or Xangos, are baked or air-fried, tortilla-wraps filled with fruit and cream cheese. A cheesecake dessert to die for!

Ingredients
- 1 brick (8 oz) cream cheese, softened
- ⅔ cup sugar
- 1 teaspoon vanilla
- ½ cup heavy or whipping cream
- 1 ½ cups apple pie filling - chopped into small pieces or diced
- ½ cup sugar
- 3 teaspoons cinnamon
- 8-10 small tortillas
- ⅓ cup melted butter
- Caramel sauce for topping
- Toffee bits as a topping
Instructions
- Heat oven to 350 and brush a baking sheet with a little melted butter. Set aside.
- Pull out and measure all of the ingredients.
- Beat together cream cheese, vanilla, and sugar.
- In a separate bowl, beat heavy cream for 5 minutes until it thickens, and then beat into the cream cheese mixture. Set aside.
- Blend sugar and cinnamon together on a wide plate, and set aside.
- Set up workstation.
- Lay out tortillas, and add 2-3 tablespoon of cream cheese mixture to the center of each one.
- Spread mixture up and down like you would a soft taco.
- Top with a couple spoonfuls of apples,
- followed by a drizzle of caramel and sprinkle of toffee bits. Add any other toppings you prefer.
- Tuck the ends in and roll up tortillas. Then brush with a little melted butter all over and roll in cinnamon/sugar mixture.
- Arrange on baking sheet.
- Bake 15-18 minutes at 350 degrees or until they begin to turn a golden color.
- Cut in half and enjoy warm or cold with or without ice cream, whipped cream or dip!

Air Fryer
- Preheat to 360 degrees and cook for 8-10 minutes, or as crisp as you desire.
- Brush with a little melted butter (all over) and roll in cinnamon/sugar mixture.
Deep Frying Instructions
- Place filling on top of each tortilla as you want it.
- Roll up tortillas.
- Wrap tightly with parchment paper or plastic wrap and then tinfoil.
- Freeze for at least an hour until firm.
- Mix cinnamon and sugar on to a shallow plate with a rim or edge.
- Using toothpicks, secure tortillas and fry in a skillet or saucepan in an inch of oil until a nice golden-brown.
- Flipping after a couple minutes.
- Roll in cinnamon sugar mixture while hot.
- Serve immediately.
