Easy Cheesy Scalloped Potatoes

Ingredients

  • 2 lbs Russet potatoes peeled and sliced 1/4'' thick
  • 1/4 c. butter
  • 1/4 c. all-purpose flour
  • 1 1/2 c. Half & Half
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 oz freshly grated cheddar cheese
  • 1/4 c. freshly grated mozzarella cheese

  1. Preheat oven to 400 degrees
  2. Grease 9x13 inch baking pan with non-stick spray. Set aside. 
  3. In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in half and half. Cook until mixture has thickened, 2-3 minutes. Stir in cheddar cheese all at once, and continue stirring until melted, about 30 to 60 seconds. 
  4. Place half of sliced potatoes in bottom of prepared baking dish. Top with half of the cheese sauce. Repeat layers. Top with mozzarella cheese.
  5. Bake 1 1/2 hours in the preheated oven.
