Easy Cheesy Shrimp Fajita Quesadillas - delicious fresh shrimp, peppers, onions, and perfectly melted cheese in a hearty seafood appetizer or main dish that you won't be able to get enough of! These shrimp fajita quesadillas are one of my favorite indulgences in summer.

Ingredients

  • 1 tbsp olive oil
  • 1 lb peeled and deveined shrimp
  • 2 bell peppers sliced into long strips
  • 1 large onion halved and then sliced into strips
  • 2 tsp blackening seasoning or taco seasoning
  • ½ cup shredded sharp cheddar cheese
  • ½ cup mozzarella cheese
  • 6 tortillas

Instructions

  1. In a large, heavy pan, heat olive oil until shimmery.
  2. Add onions and peppers.
  3. Let brown, about 15 minutes.
  4. Add shrimp and seasoning, stir to coat evenly.
  5. Cook until shrimp just turn pink, remove from heat.
  6. Add cheese and shrimp and pepper mixture to tortilla and cook in a clean pan, flipping over when bottom is browned.
  7. When cheese has melted, quesadilla is done!
  8. Slice and serve!
