Ingredients
- 30 ounce chickpeas rinsed and drained
- 3 celery stalks diced
- 1 shallot minced
- 2 tablespoons capers
- 0.5 ounces fresh dill
- Zest and juice of one lemon
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- Pinch of salt and pepper
- lettuce cups for serving
Instructions
- Place the chickpeas in a large bowl. Lightly mash them with a fork.
- Add the rest of the ingredients to the bowl.
- Stir until everything is combined.
- Serve in a lettuce cup or on toast with lemon wedges.
