Ingredients

  • 30 ounce chickpeas rinsed and drained
  • 3 celery stalks diced
  • 1 shallot minced
  • 2 tablespoons capers
  • 0.5 ounces fresh dill
  • Zest and juice of one lemon
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Pinch of salt and pepper
  • lettuce cups for serving

Instructions

  1. Place the chickpeas in a large bowl. Lightly mash them with a fork.
  2. Add the rest of the ingredients to the bowl.
  3. Stir until everything is combined.
  4. Serve in a lettuce cup or on toast with lemon wedges.
