Ingredients

  • 1 lb. extra lean ground beef
  • 1 large onion chopped
  • 2 tsp. fresh minced garlic
  • 1 small red pepper diced
  • 1-15 oz. can red kidney beans rinsed and drained
  • 1- 8 oz. can tomato sauce
  • 2 medium ripe tomatoes
  • ½ cup elbow macaroni
  • ½ cup water
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. dried cilantro
  • 1 tsp. salt
  • Freshly ground pepper to taste
  • 1 cup Mexican blend cheese grated

Instructions

  1. In a large skillet or saute pan cook the beef until starting to brown, add in the onions, pepper and garlic and cook until translucent.
  2. Add in the kidney beans, tomato sauce, tomatoes, macaroni, water, chili powder, cumin, cilantro, salt and pepper. Bring to a boil, cover, reduce to simmer and cook for 20 min. Top with the cheese and cover again for 2-3 min. until melted.
