Easy Chorizo and Potato Soup

This Easy Chorizo and Potato Soup is quite possibly be the easiest, most flavorful soup that takes under 30 minute to prepare and only requires six ingredients.

Ingredients

  • 3/4 cup chopped onion
  • 9 oz Mexican chorizo
  • 3 cups diced potato (any kind is fine)
  • 28 oz low-sodium chicken broth
  • 1/2 tsp kosher salt
  • 1 1/2 cups frozen corn
  • 1-2 cups chopped, massaged kale (optional)
  • 1 cup cojita cheese (optional)

  1. Heat a large dutch oven or stock pot to a medium-high heat. Add chorizo and onion. Cook until chorizo is browned and cooked through, about 10 minutes. Add potatoes, toss with a wooden spoon and cook until slightly softened, about 3-4 minutes. 
  2. Add chicken stock and salt. Bring to a boil and reduce to a simmer. Simmer until potatoes are cooked through, about 10-12 minutes. (If using kale, add after the soup has simmered for 8 minutes.)  Add corn, simmer another minute. Season with salt and pepper. Garnish with chopped parsley and cojita cheese.
