Easy Cilantro Lime Brown Rice Recipe

Ingredients

  • 1 teaspoon olive oil
  • ½ onion diced
  • 2 garlic cloves minced
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • 1 cup brown rice
  • 2 cups water
  • juice of ½ lime
  • ¼ cup minced cilantro

Instructions

  1. Heat the olive oil in a medium saucepan set over medium heat.
  2. Add the onion and cook, stirring occasionally, until the onion is tender, about 5 minutes. Stir in the garlic, cumin and salt, and cook for 30 seconds.
  3. Add the brown rice and stir to combine with the onion mixture.
  4. Add the water and bring to a boil. Reduce the heat to low, cover and simmer until all of the water is absorbed, 45 to 55 minutes.
  5. Fluff the rice, mix in the lime juice and cilantro, and serve.
