Easy Coronation Chicken

A classic British dish that is ready in just 5 minutes. Coronation Chicken is easy to prepare and versatile too.

Ingredients

  • 200 g cooked chicken shredded
  • 3 tablespoon Greek yogurt
  • 2 tablespoon mayonnaise
  • 1 tablespoon curry powder
  • 1 tablespoon mango chutney
  • 1 tablespoon raisins
  • 20 g flaked almonds
  • 1 pinch sea salt and ground black pepper

Instructions

  1. Put the shredded chicken into a bowl.
  2. Add all the other ingredients to the chicken.
  3. Mix well so that everything is combined.

Notes

  • If you want to loosen the sauce a little, you can add a couple of tablespoons of water.
  • Instead of mayonnaise you can just use creme fraiche and yogurt to make a lighter version.
  • To keep this more traditional, swap the raisins for dried apricots and leave out the mango chutney - but we love the flavour it adds.
