Ingredients

For the Meatloaf
  • 2 pounds ground beef we recommend 80% lean
  • 2 teaspoons olive oil
  • ½ cup onion finely diced
  • ½ cup bell pepper finely diced
  • 1 cup Ritz crackers crushed
  • 2 eggs beaten
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup whole milk
  • salt and pepper to taste (we use 1/2 teaspoon for each)
For the Topping
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 teaspoon yellow mustard

Instructions

    Cup of Yum
  1. Preheat the oven to 350°F. Lining a loaf pan with parchment paper. Set aside.
  2. Add oil to a large skillet over medium heat. Sauté the diced peppers and onions until softened, about 5 minutes. Set aside and let cool.
  3. Combine the whisked eggs, crushed crackers, onions, bell peppers, cheese, milk, salt, and pepper in a large bowl.
  4. Add the ground beef and mix until just combined. Don't overwork the meat.
  5. Form the mixture into a loaf and place it into a loaf pan.
  6. Bake for 30 minutes.
  7. Combine the topping ingredients and set aside while the meatloaf bakes.
  8. Remove the meatloaf and brush with the topping.
  9. Bake for an additional 30-40 minutes. (Remove from the oven when it reaches 155°F.)
  10. Let it rest for 10-15 minutes in the loaf pan. Serve with your favorite sides and enjoy!

Notes

  • A loaf pan lined with parchment paper will make it easier to lift the loaf from the pan.
  • Remove from the oven when it reaches 155°F. The temperature will continue to rise during resting.
