Easy Cranberry Stuffing

This cranberry stuffing blends seasoned bread cubes with apples, wild rice, dried fruits, nuts, and traditional stuffing vegetables. The mixture is moistened with broth and baked until heated through and lightly browned on top, producing a moist yet textured side dish with sweet and savory notes from the dried cranberries, raisins, and apples.

Ingredients

  • 1/2 cup butter cubed
  • 1 red onion diced, small
  • 1 celery chopped, rib
  • 12 cups stuffing cubes seasoned
  • 1 green apple finely chopped
  • 1 red apple finely chopped
  • 2 cups wild rice or wild rice mix, cooked
  • 1 1/2 cups dried cranberries
  • 1/2 cup raisins dried
  • 1 cup pecans roughly chopped
  • 2 teaspoons parsley dried
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 to 2 cups chicken broth or veggie broth
  • 1/4 cup almonds slivered

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large stockpot or Dutch oven, melt butter over medium heat.
  3. Add onion and celery and cook and stiring for 4-5 minutes or until tender.
  4. Add stuffing cubes, green and red apple, dry rice, cranberries, raisins, pecans and seasonings, toss to combine. Stir in enough broth to reach desired moistness.
  5. Transfer to a greased 9x13 inch baking dish, cover with aluminum foil. Bake for 30 minutes. Uncover and bake for 10-15 minutes longer or until lightly browned.
  6. Garnish with slivered almonds and serve.
