Easy creamed spinach

This easy creamed spinach is absolutely delicious and a super quick side dish. It also makes the perfect omelette filling and is excellent on grilled cheese.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1-2 garlic cloves crushed (to taste)
  • 8 cups baby spinach washed
  • pinch of grated nutmeg
  • ½ cup cream
  • Juice of ½ lemon
  • salt & pepper to taste

Instructions

    Cup of Yum
  1. Melt the oil and butter together then add the garlic and allow to gently cook until the garlic is soft and fragrant.
  2. Add the spinach, salt, pepper and nutmeg and allow the spinach to wilt in the pan.
  3. Pour over the cream and lemon juice then allow to cook for another minute or two until the spinach is cooked through.
  4. Serve.
