Ingredients
- 2 cups rotisserie chicken (or cooked chicken) shredded
- 1 tbsp olive oil
- 1 small onion diced
- 3-4 garlic cloves minced
- 1 bag frozen California Medley mix (broccoli, cauliflower, carrots)
- 1 cup cream
- 2 cups chicken broth
- 2 cups cheddar cheese shredded
- 1 cup uncooked orzo
Instructions
- In a large pot, heat olive oil over medium heat. Stir in the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the rotisserie chicken to the pot and cook for a few minutes to warm through.
- Add the California mix to the pot and mix well with the chicken. Season with salt and pepper to taste.
- Pour in the chicken broth and cream, and bring the mixture to a gentle simmer.
- Add the orzo to the pot and cook according to the package instructions until tender, stirring occasionally.
- Once the orzo is cooked, stir in the shredded cheddar cheese until melted and the sauce is creamy. Season with salt and pepper to taste. Serve immediately.
