Easy Creamy Salmon Pasta Recipe

Ingredients

  • 1 lb salmon skin removed and salmon cubed
  • 2 tablespoon butter
  • 1 tablespoon flour
  • 1 c white wine
  • 1 c half and half see the notes
  • 1 tablespoon capers
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 8 oz dry fettuccine or any other pasta
  • 4 tablespoon parsley chopped

  1. Bring a large pot of salted water to a boil. Add fettuccine and cook 10 minutes or until ready. After pasta is soft or al dente if you like, drain pasta reserving 1 cup of pasta cooking water.
  2. Meanwhile, melt 1 tablespoon of butter in a large non-stick pan and over medium heat.
  3. Add salmon and sear for 3-4 minutes on each side. Transfer salmon on a paper towel.
  4. In the same pan melt the remaining 1 tablespoon of butter, add flour and whisk until paste cooks and bubbles for 1 minute. Add white wine and simmer until reduced by half, 3 minutes
  5. Add half and half, smoked paprika, capers, salt and pepper and heat until bubbles. Add salmon back into the pan and cook for another 3 minutes.
  6. Add pasta to a pan with salmon and the sauce, and mix everything well. If needed, add ¼ cup of pasta cooking water to thin out the sauce. Otherwise, divide creamy salmon pasta among the serving bowls, sprinkle with parsley and enjoy!

Notes

  • What is half and half? It is milk and heavy cream taken in equal proportions. If you don't have it, you can substitute it with a regular heavy cream.
  • Choose the right salmon: For this creamy salmon pasta recipe, it's best to use fresh salmon fillets. Make sure the skin is removed and the salmon is cubed before cooking. This guarantees even cooking and makes it easier to incorporate into the pasta.
  • Don't discard the pasta water: After boiling your pasta, don't forget to reserve some of the pasta water. This starchy water can be used to thin out the sauce if needed, and it helps bind the sauce to the pasta.
  • No wine? If you don't have white wine, you can use chicken broth or vegetable broth. It will still give the sauce a nice flavor.
  • Refrigerate: After enjoying this creamy salmon pasta recipe, you can store any leftovers in an airtight container in the fridge. They'll stay fresh for up to three days.
  • Reheat Instructions: When you're ready to enjoy your leftovers, simply reheat them on the stovetop over medium heat. Stir occasionally to prevent the pasta from sticking to the pan.
  • Freeze: Unfortunately, this dish doesn't freeze well due to the heavy cream in the sauce. Freezing can cause the sauce to separate and lose its creamy texture.
