Easy Creamy Tomato Shrimp Angel Hair Pasta

Ingredients

  • 1 pound angel hair pasta
  • 2 tablespoons butter
  • 4 cloves garlic crushed
  • 1 pound Shrimp peeled and deveined, raw
  • 1 (15 ounce can) diced tomatoes undrained, fire roasted
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt or to taste
  • 1 teaspoon red pepper flakes crushed
  • 1/2 to 1 cup heavy cream
  • 2 tablespoons parsley chopped, fresh

Instructions

  1. Cook the pasta according to package instructions.
  2. In a saucepan, melt the butter over medium-high heat. Add the garlic and shrimp, stirring continuously until the shrimp are pink and cooked through. Remove the shrimp from the pan and set aside.
  3. In the same pan, add the diced tomatoes, Italian seasoning, salt, and red pepper flakes. Bring the mixture to a simmer.
  4. Stir in the heavy cream and heat through for 1 to 2 minutes.
  5. Add the cooked pasta to the sauce and toss to coat. Add the shrimp back to the pan and garnish with chopped fresh parsley. Serve immediately.

Notes

  • For a creamier dish, use the full amount of cream.
