Easy Crockpot Chili Recipe

Ingredients

  • 1 pound lean ground beef
  • kosher salt and pepper to taste
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper or to taste
  • 2 carrots finely diced
  • 3 celery sticks finely diced
  • 1 large bell pepper seeded and diced
  • 1 sweet onion diced
  • 3-4 garlic cloves minced
  • 1 tablespoon Worcestershire sauce 
  • 14.5 ounces black beans one can, drained and rinsed
  • 14.5 ounces black eyed peas one can
  • 14.5 ounces diced tomatoes one can
  • 2 cups beef bone broth or beef broth

Instructions

  1. Heat a large pan over medium heat and cook and mince the 1 pound lean ground beef until no longer pink. Add in the Kosher salt and pepper, 1 tablespoon ground cumin, 1 tablespoon smoked paprika, 1 teaspoon ground coriander, and 1/2 teaspoon cayenne pepper.
  2. Add the 2 carrots (finely diced), 3 celery sticks (finely diced), 1 large bell pepper (seeded and diced), 1 sweet onion(diced), and 3-4 garlic cloves (minced). Cook for 5-7 minutes, stirring often.
  3. Transfer the meat and veggies mixture to a slow cooker.
  4. Add the remaining ingredients. Which are the 1 tablespoon Worcestershire sauce, 14.5 ounces black beans, 14.5 ounces black eyed peas, 14.5 ounces diced tomatoes, and 2 cups beef bone broth. Stir to combine.
  5. Cook on low for 8-10 hours or on high for 4-5 hours.

Notes

  • Storing leftovers
  • Refrigerate: Store leftovers in the fridge in an airtight container for up to 4 days.
  • Freeze: For longer storage, transfer to a freezer-safe container and freeze for up to 3 months.
  • Reheat: If frozen, thaw overnight, then reheat over low heat on the stovetop in a pot or pop individual servings in the microwave until warm.
  • Serving size is 1-1/3 cup.
