Easy Cucumber Apple Salad

Apple Cucumber Salad is refreshing and vibrant with the crispness of apples combined with the coolness of cucumbers- a perfect snack!

Ingredients

  • 1 medium apple chopped without peeling
  • 1 large cucumber sliced in thinned layers
  • 2-3 tablespoon fresh mint leaves chopped
  • 2 tablespoon peanut butter chunky or plain
  • 1 tablespoon maple syrup
  • 1 teaspoon black pepper
  • a pinch salt
  • 2 teaspoon lemon juice

Instructions

  1. Gather all the ingredients and wash them under running water.
  2. Sort and chop the mint leaves. Make sure to wash them under tap water.
  3. Slice apple in small chunks. I have preferred it with skin. Peel 5-6 thin layers of cucumber and then chop it as desired.
  4. Once the chopping is done, keep aside the chopped salad.
  5. Add peanut butter to a large bow. Add maple syrup to it. Mix well
  6. Add lemon juice, salt and black pepper and give it a good mix.
  7. Add chopped salad and mix well.
  8. The delicious Apple Cucumber Mint Salad is ready!

Notes

  • Choose crisp and firm apples and cucumbers for the salad.
  • To maintain the freshness and crispness of the salad, it's best to prepare it shortly before serving. This helps to retain the vibrant colors and prevents the ingredients from becoming soggy.
  • If you have any leftovers, place them in an airtight container or cover them tightly with plastic wrap and store them in the refrigerator.
