Easy cucumber feta salad

This cucumber feta salad recipe is a great easy side dish for summer. Packed with fresh herbs and dressed with lemon vinaigrette.

Ingredients

  • 2 English cucumbers
  • 150 g (5oz) feta cheese
  • ¼ cup fresh dill
  • 2 tbsp fresh chives
  • handful fresh basil
For the dressing
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Chop the cucumber and place in a large bowl.
  2. Slice the feta cheese into cubes and add to the cucumber.
  3. Finely chop the chives and dill and tear the basil leaves then add the herbs to the bowl.
  4. In a small bowl, whisk together the lemon juice, olive oil, salt and pepper then pour over the salad.
  5. Toss to combine and serve. 

Notes

  • When I want to make this salad in less than 5 minutes, I don't bother with peeling the cucumber or removing the seeds. However, if you want to prepare the salad in advance, removing the seeds is a good idea.
