Easy Cucumber Lime Punch
This refreshing cucumber lime punch combines diet lemon-lime soda with frozen limeade and thinly sliced cucumber to infuse the drink with a subtle, cool cucumber flavor. The punch is served chilled with ice and optional fresh lime wedges. It makes a light, citrusy beverage that can be prepared ahead and is well-suited for gatherings where a non-alcoholic, lightly flavored beverage is appreciated.
Ingredients
- 1 tray ice
- 2 liters lemon-lime soda diet
- 12 ounces limeade 1 can, frozen
- 1 cucumber sliced thin
- lime optional for garnish, fresh, wedges
Instructions
- In a large pitcher or bowl, add as much ice as you want. (The more ice you add, the more watered down the drink will be as it melts, of course.)
- Add the soda and the frozen limeade.
- Add all of the sliced cucumbers and lime wedges (or reserve some to garnish individual glasses).
- Stir together until the limeade melts.
- If you serve it right away, the cucumber flavor will be light. I like to let it sit for an hour or two in the fridge because I like a stronger cucumber flavor. This drink is nice for parties because you can make it ahead and pull it out right when the party starts.
Notes
- Diet lemon-lime soda works best to balance sweetness without overpowering flavor.
- Letting the punch sit in the refrigerator for 1-2 hours enhances the cucumber infusion.
- Regular soda can be used but may result in a sweeter drink.
- Use fresh, thinly sliced cucumber to achieve a light, fresh flavor.
