Ingredients
- 2 medium English cucumber thinly sliced
- 1 teaspoon salt
- 1 medium red onion thinly sliced
- 1 cup distilled white vinegar
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 tablespoons minced fresh dill
Instructions
- Season cucumber slices with 1 teaspoon salt in a large bowl and let sweat 1 hour.
- Drain liquids, without rinsing, and toss cucumbers with onion slices.
- In a small saucepan over high heat, combine 1 cup distilled white vinegar and 1/2 cup water and stir in 1/2 cup granulated sugar. Continue stirring just until sugar is fully dissolved and liquid turns clear, 3 to 5 minutes.
- Pour over cucumbers and onions. Stir in 2 tablespoons minced fresh dill. Cover with plastic wrap and refrigerate 1 hour. Serve cold or at room temperature.

Notes
- Why English cucumbers? They have a thinner skin and less seeds than the regular cucumbers you find at the grocery store. You can still use regular cucumbers, but you may need more than two as they are also smaller.
