Easy Cucumber Salad

This salad features thinly sliced English cucumbers combined with red and green onions, fresh dill, and a light champagne vinegar and honey dressing. The cucumbers are salted and drained to remove excess moisture before being mixed with aromatic herbs and a tangy-sweet dressing. The salad is crisp, refreshing, and mildly sweet with a bright herbal note, suitable as a side dish or light appetizer.

Ingredients

  • 2 English cucumber thinly sliced, large
  • 1 tablespoon kosher salt
  • ½ red onion thinly sliced
  • 2 green onions thinly sliced
  • 3 tablespoons dill chopped, fresh
  • 1½ tablespoon champagne vinegar or white wine vinegar
  • 2 teaspoons honey
  • black pepper to taste, freshly ground

Instructions

  1. Toss cucumbers with salt. Add the sliced cucumber to a colander and toss with the salt. 
  2. Wash and drain the cucumbers. Set the colander in your sink or on top of a plate, as the salt will pull liquid from the cucumbers. Let this sit for 20 minutes, then rinse the cucumber with cold water.
  3. Add the salad ingredients to a bowl. Add the drained cucumber to a salad bowl along with the red onion, green onion and fresh dill. 
  4. Make the dressing. Stir the vinegar and honey together in a separate small bowl, then pour on top of the salad.
  5. Garnish with black pepper and additional fresh dill leaves.

Notes

  • Salting and draining the cucumbers before combining helps prevent a watery salad and keeps the texture crisp.
  • Thin slicing with a mandoline speeds prep and ensures even pieces.
  • Use fresh dill for more vibrant flavor, and consider adding extra dill leaves as garnish.
  • Glass mixing bowls can help with easy mixing and are preferred in many of my recipe preparations.
