Easy Cucumber Salsa
Crunchy, delicious, and soooo fresh, this cucumber salsa is the perfect topping or side dish!
Ingredients
- 1 English cucumber chopped, seedless
- 1 cup grape tomato halved, or cherry tomato
- 1 shallot chopped, small
- ½ jalapeño finely chopped, optional
- ½ bunch cilantro chopped, fresh
- 1 lime juiced
- ½ teaspoon salt
- Pinch black pepper
Instructions
- Chop all the fresh ingredients and add them into a medium bowl.
- Squeeze the lime over the bowl, season with salt and pepper, and toss to combine.
- Refrigerate the salsa until ready to serve, for up to 2 days.
