Easy Egg Fried Rice
This is the absolute EASIEST egg fried rice recipe ever! It's perfect for days when hanger is setting in and you need food now! Satisfy your hunger in 5 minutes.
Ingredients
- 4 egg beaten
- 4 green onions thinly sliced with whites & greens separated
- 7 garlic cloves
- 2 cups white rice packed, cooked
- 2 ½ teaspoons soy sauce
- ½ teaspoon sugar
- ¼ teaspoon salt
- ½ teaspoon sesame oil optional
Instructions
- Heat a wok on medium-high heat. Add about a tablespoon of oil then pour in eggs. Cook until the eggs are just set, then set aside.
- Add a little more oil if the pan looks dry, then add the whites of the green onions & garlic. Saute for a few seconds, or until soft & fragrant.
- Toss in rice, mix with aromatics, & break up any chunks of rice. Pour soy sauce along the edges of the wok to create a char, then sprinkle in sugar & salt. Mix well until soy sauce is evenly distributed.
- Add eggs back in, drizzle sesame oil & toss again until well combined. Taste & add more salt if needed, then turn off heat, sprinkle in remaining green onions, & sesame seeds if desired. Enjoy!
Notes
- Rice: Jasmine rice or long grain rice is traditionally used for Chinese fried rice, which results in flakey fried rice. Avoid sweet, sushi, or glutinous rice because they become stickier and clump.
