Ingredients

Enchiladas Suizas Sauce
  • 1 (16-ounce jar) salsa verde
  • 1 cup sour cream
Enchiladas Suizas
  • 2 cups chicken Can use rotisserie chicken, shredded, cooked
  • 1-1/2 cups mozzarella cheese
  • 12 corn tortillas

Instructions

To Make The Enchiladas Suizas Sauce

  1. Add the sour cream and salsa verde to a blender or food processor and blend until smooth.
To Make The Enchiladas Suizas
  1. Preheat oven to 350 degrees F.
  2. Pour about 1/3 of the Enchilada Sauce into the bottom of a 9x13 baking dish.
  3. Fill each tortilla with shredded chicken and shredded Mozzarella cheese.
  4. Roll each tortilla and lay seam-side down into the baking dish.
  5. Pour the remainder of the Enchilada Sauce over the top of the enchiladas.
  6. Sprinkle the remaining shredded Mozzarella cheese over the top of the sauce covered enchiladas.
  7. Bake in a preheated 350-degree oven for 30 minutes or until the enchiladas are heated through and the cheese is melted.

Notes

  • Note: To soften hard corn tortillas, wrap a stack of about 6 tortillas with damp paper towels and microwave for about 1 minute.  Then they should be soft and pliable so you can roll them.
