Easy Flatbread Recipe

Ingredients
- 2 cups (250g) self raising flour
- 1 cup (250g) natural yogurt
- 2 tsp olive oil optional but recommended
- Optional add-in's
Instructions
- Mix the flour, yogurt and oil (and any other add-ins, if using) in a mixing bowl until combined.
- Add dough to a floured work surface with flour and knead for a minute so it comes together.
- Divide the bread dough into 8 and roll these sections into balls.
- Flatten each ball and then use a rolling pin to roll each piece into 3-4 inch (10-12 cm) rounds.
- Preheat the air fryer to 300F / 148C, spray on a little oil and add your flatbread.
- Place flatbread in the air fryer basket and cook each one for 8 to 9 minutes, turning them halfway through the cooking time. Sometimes they will puff up in the air fryer, so you may want to place a trivet on top to keep them flat and prevent them from being blown around.
- Repeat until all the flatbreads are cooked.

Notes
- You can flavor your flatbreads however you wish. I suggest you make a basic plain batch, split it into portions and get everyone to sprinkle on their add-ins as they are rolling out the dough. Here are just a few mix-in suggestions to try:
- If you do not add any meat or oil, there are 4 Blue Plan SmartPoints in a serving.
- I prefer a slightly crunchy yogurt flatbread, so I roll them out thinner and air fry a little longer.
- You can easily double or triple the recipe but then have at least 2 skillets on the go so you can cook them faster.
- Cook time depends on the thickness and size of the rolled dough – so start out with less time if you are unsure and increase accordingly.
- It's important to note that air fryer temperatures can vary depending on the make and model. I recommend starting with less cook time, check food for doneness then add more time as needed.
