Easy Flaxseed Muffins Recipe

Ingredients

  • 1/2 cup ground flax seed
  • 1/2 cup almond flour
  • 3/4 cup gluten free flour
  • 2 large eggs
  • 1/2 cup dairy free milk
  • 1 tsp vanilla
  • 1/3 cup coconut sugar
  • 3 tbsp granulated sugar
  • 1/4 cup oil
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F.
  2. Line a muffin tin with liners or grease well. Set aside.
  3. Whisk eggs in a large bowl.
  4. Add the milk, vanilla, sugars and oil. Whisk until smooth.
  5. Add the remaining ingredients and whisk just until all ingredients are incorporated.
  6. Divide the batter evenly between the muffin cups.
  7. Bake for 15-17 minutes, until a toothpick inserted in the center comes out clean.
  8. The muffins can be left at room temperature for one day, or refrigerated or frozen to enjoy later.
