Ingredients
- 1 cup milk
- 2 large eggs
- 2 egg yolks
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
- 1 pinch salt
- 1 teaspoon vanilla extract
- 8 slices brioche bread toasted or slightly stale
- 4 tablespoons unsalted butter
Toppings
- fruit, powdered sugar, whipped cream, buttermilk syrup
Instructions
- In a medium bowl or cake pan, whisk milk, eggs and egg yolks together. Add sugar, cinnamon, salt and vanilla extract and whisk until smooth.
- Soak bread slices in mixture until saturated, 10–15 seconds per side.
- Heat butter on a griddle or in a frying pan over medium heat. Add bread slices and cook until golden brown, 2–3 minutes per side.
- Serve hot with your favorite toppings.

Notes
- Make Ahead: Wrap a few slices individually in plastic wrap and freeze them in a resealable plastic freezer bag. Eat within 1–2 months for best quality.
- To reheat: Place frozen toast on a foil-lined baking sheet in a single layer. Bake at 375 degrees F for 8–10 minutes. You can also use a toaster.
- Kick it up a notch: Try using thick slices of French bread, sourdough or even cinnamon bread.
