Easy Fruit Cookie Pizza
Juicy, sweet fruit is piled on top of a sweet cream cheese based frosting with a sugar cookie crust. It's perfect for brunch or dessert!
Ingredients
- 16 ounces sugar cookie dough
- 8 ounces cream cheese
- ¼ cup granulated sugar
- 2 teaspoons vanilla extract
- Fruit sliced, various
Instructions
- Preheat the oven to 350°F.
- Roll the cookie dough out into a large circle (about the size of a large pizza).
- Place the dough on a parchment lined or silicone mat lined baking sheet. Do not place it directly on a cookie sheet or pizza stone. It will stick. If you do not have parchment paper or a silicone mat, be sure to grease your baking sheet very well with nonstick spray.
- Bake the cookie dough crust in the oven for about 15-17 minutes, or until the edges are set and just barely begin to brown.
- Remove the crust from the oven and allow it to cool completely.
- In a medium sized mixing bowl combine the cream cheese, sugar, and vanilla.
- Whip the frosting together with an electric hand mixer until it's fully combined and fluffy.
- Spread the frosting over the cooled cookie dough.
- Top the frosting with your fruit.
- Serve the fruit pizza sliced like a standard pizza and enjoy!
