Easy Fruit Pizza
This easy fruit pizza makes the perfect summer dessert! There’s a sugar cookie base, a lemony cream cheese layer and loads of fresh fruits.
Ingredients
- 16.5 ounce sugar cookie dough package
- 8 ounces cream cheese room temperature
- 1 teaspoon lemon zest
- 1 tablesppon lemon juice
- 1/2 cup powdered sugar plus 2 tablespoons
- 2 tablespoons heavy cream
- 8 strawberries sliced
- 1 kiwi sliced
- 1/2 cup blueberries
Instructions
- Preheat the oven to 350 degrees F.
- Firmly and evenly press the sugar cookie dough into a 12-inch round pizza pan
- Place the crust in the preheated oven and bake for 25 minutes or until the edges are golden brown and the center is set. Remove from oven and let cool.
- In a large bowl, add the cream cheese using a hand mixer on medium until creamy.
- Add the lemon zest, lemon juice, powdered sugar, and heavy cream. Beat until incorporated. Scrape down the sides and bottom of the bowl and mix in any remaining bits. Once everything is incorporated, beat on medium speed for 1 minute.
- Spread the cream cheese mixture evenly on top of the cooled cookie base using an angled spatula.
- Slice the fruit using a mandoline or knife and place on the pizza.
- Refrigerate until ready to serve.
Notes
- Fruit: Other fruits that will work great on this dessert pizza are grapes, mangoes, blackberries, mandarine oranges, apples, and raspberries.
- Storage: Store this fruit pizza in an airtight container or covered with plastic wrap in the refrigerator for up to 4 days.
