Easy Garlic Herb Chicken with Mushrooms and Broccoli Skillet
This easy garlic herb chicken with mushrooms and broccoli skillet is the answer to a simple weeknight meal. It’s a creamy, garlicky parmesan sauce with broccoli, mushrooms and perfectly seared tender and juicy chicken breasts on top. This is a one-skillet meal that is ready to go in no time at all.

Ingredients
for the chicken
- 4 chicken breasts thin, boneless and skinless
- ½ cup all purpose flour
- 3 tbsp grated Parmesan cheese
- 2 tsp fresh thyme leaves or dried Italian seasoning
- 1 tsp garlic powder
- salt and pepper to taste
- 2 tbsp olive oil
for the sauce
- 3 tbsp butter
- 1 small onion finely diced
- 4-5 garlic cloves minced
- 1 cup mushrooms sliced
- ½ tsp smoked paprika
- ½ tsp Italian seasoning
- 1 cup cream
- 16 oz frozen broccoli florets
- ¼ cup Parmesan Cheese
Instructions
- Prepare the chicken; paper towel dry the thin chicken breasts (be sure to butterfly and pound thin if you bought thick ones). In a large bowl, combine flour, salt, pepper, garlic powder, grated parmesan cheese, and fresh thyme leaves. Stir well to blend.
- Using a fork or tongs, coat the chicken breasts in the flour mixture and set aside.
- Heat olive oil in a large skillet over medium-high heat. Once the skillet is hot, place flour coated chicken breasts in the skillet and cook for 4-5 minutes on each side, until golden brown on both sides. Set aside on a covered plate.
- Prepare the sauce; in the same skillet over medium heat, add butter, garlic and onions. Once onion and garlic are translucent add mushrooms, smoked paprika, italian seasoning, salt, and pepper to taste. Stir until fragrant, 3-4 minutes.
- Reduce heat to low; add in cream, frozen broccoli and give a good stir; cover and let simmer 4-5 minutes.
- Remove the pan from the heat and stir in parmesan cheese until well combined. Nestle in the seared chicken breasts into the sauce along with the broccoli. Serve over pasta or rice, if desired.
