Easy Garlic & Herb Oven Roasted Tomatoes

These delicious oven roasted tomatoes are loaded with garlic and herb flavor, so easy to make and are the perfect side dish to go along with steak, roast beef and more!

Ingredients

  • 3-4 large tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic peeled and minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried parsley OR fresh to garnish at the end
  • flaked sea salt and freshly cracked pepper

Instructions

  1. Preheat your oven to 450 °F.
  2. Wash then slice the tomatoes in half horizontally. Remove the stems if desired.
  3. Pour the olive oil into a medium sized bowl, then mix in the garlic, basil, rosemary and parsley (unless you are using fresh parsley, then you keep the parsley until the end)
  4. Take each tomato half and swirl around the bowl, coating with the oil and seasonings, then lay them cut side up on a baking sheet. I used my hands to do this, and then I make sure that there are some garlic pieces on top of each one at the end by spooning them on top. Sprinkle with salt and pepper.
  5. Bake in the oven for 25-30 minutes, or until the tomatoes are completely softened and wrinkled around the edges.
  6. Remove and serve hot or at room temperature.

Notes

  • You can sprinkle some Parmesan on top 5 minutes before taking them out if desired
