Easy Greek Yogurt Banana Bread

Ingredients

  • 2 large ripe bananas about 1 ½ cups mashed
  • ½ cup Greek yogurt vanilla or plain
  • ½ cup butter melted
  • ½ cup white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

Prep:

  1. Preheat the oven to 350F, grease a loaf pan, or line it with parchment paper.
Make the batter:
  1. In a large bowl, mash the bananas. Add the Greek yogurt, melted butter, and eggs. Whisk to combine. Add the sugar and vanilla, and mix.
  2. In another bowl, mix the flour, baking soda, and salt.
  3. Gradually mix the dry ingredients into the wet ingredients bowl until just combined. Pour the batter into the greased loaf pan.
Bake:
  1. Bake in the preheated oven for 55 minutes until a toothpick inserted in the center comes out clean. Around minute 40, if the top of the loaf is getting too brown, cover it with a piece of tin foil and continue to bake. 
  2. Remove it from the oven and allow it to cool down for 15 minutes before removing it from the pan and slicing.
