Easy Grilled Chicken Kabobs

These easy grilled chicken kabobs are a crowd-pleasing BBQ favorite. Tender chicken, bell peppers, and red onions are a much-loved flavor combination that you'll be repeating all summer long. You can use your favorite BBQ sauce in this recipe!

Ingredients

  • 4 chicken breasts cut into bite-size pieces
  • 3/4 cup of your favorite BBQ sauce
  • 2 tablespoons olive oil
  • 1 red pepper  cut into bite-size pieces
  • 1 green pepper  cut into bite-size pieces
  • 1 red onion  cut into bite-size pieces

  1. Add the BBQ sauce and olive oil to a small bowl and mix together (or mix right in your measuring cup). 
  2. Prep your chicken. Add it to a bowl or a large ZipLoc bag, along with 3/4 of the BBQ sauce and olive oil mixture. Reserve 1/4 of the BBQ sauce mixture for brushing on the skewers later. Let the chicken marinate in the fridge for at least 30 minutes, up to a few hours. If you're going to be using wooden skewers, be sure to soak them at least 30 minutes prior to grilling.
  3. Cut your veggies up. Assemble the skewers by alternating the chicken and veggies. I was able to make 8 skewers.
  4. Oil the grate of your grill and preheat it to high heat. 
  5. Reduce heat to medium. Brush the top of the skewers with half the remaining sauce and grill each skewer for 5-6 minutes. Turn the skewers over, brush them with the rest of the sauce, and then grill for another 5-6 minutes. I did 12 minutes total on our gas BBQ with the lid down. 

Notes

  • Every grill/BBQ/grill pan is different, so please adjust cooking time as needed to ensure that the chicken is cooked properly and to your liking (165F is the recommended safe internal temperature for chicken).
