Easy Grilled Steak & Pepper Fajitas

Spring is here, and so is grilling weather! These Easy Grilled Steak & Pepper Fajitas are the perfect reason to light up the grill.

Ingredients

  • 1 1/2 pounds skirt steak or flank steak
  • 2 bell peppers any color or a mix, seeded, cored, and cut into quarters
  • 1 red onion cut into thick slices
  • 2 tbsp olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon Smoked Salt can sub regular salt, but I highly recommend using the smoked version!
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cayenne (red) pepper
  • 1 lime
For serving:
  • Whole-grain tortillas
  • shredded cheese
  • sour cream
  • avocado
  • cilantro
  • sliced cabbage
  • sliced radishes
  • diced tomato
  • sliced raw red onion

Instructions

  1. Preheat outdoor gas grill to medium-high heat, around 425° F. Or, better yet, prepare grill with a charcoal fire.
  2. Put the bell pepper (skin side down) and onion pieces on a vegetable grill tray and the steak directly on the grill. Mix together all the spices and sprinkle over top. Drizzle veggies with olive oil (be careful of flare ups).
  3. Grill until steak is done to your liking, slightly pink (medium) or brown (well-done, recommended if using flank steak) in the middle, and the peppers are tender, approximately 7 to 8 minutes per side.
  4. Remove from the grill, squeeze with lime juice, slice the steak, peppers, and onions into thin strips, and serve with desired accompaniments.

Notes

  • We recommend organic ingredients when feasible.
  • If using flank steak, you'll want to grill it longer than a skirt steak because it is a tougher cut of meat.
