Easy Hawaiian Shrimp Lettuce Wraps

Ingredients

  • 1 pound cooked shrimp
  • 1 red pepper diced
  • 1 avocado chopped
  • 1 Cup chopped pineapple
  • 2 tablespoons low sodium soy sauce or coconut aminos
  • 2 tablespoons rice wine vinegar
  • 1 garlic clove minced
  • 1 tablespoon grated ginger or ginger puree
  • 1 tablespoon raw honey
  • 1 lime juiced
  • 1 tablespoon chopped parsley
  • 1 tablespoon sesame seeds
  • 10-12 lettuce leaves

Instructions

  1. In a medium bowl add all ingredients except lettuce and sesame seeds. Mix well to combine.
  2. Spoon shrimp salad into lettuce leaves, garnish with sesame seeds and enjoy

Notes

  • Chop your fruit and veggies into even, bite-sized chunks.
  • Add some chili flakes for an added kick of spice.
  • You can allow the shrimp to marinate in the ingredients, but no longer than 30 mins, or the shrimp could go a little soft.
  • Use cooked shrimp to make this recipe fast!
  • Top with some cilantro for a hit of herbal freshness looks lovely too!
  • This can be served as a main or app.
  • Garnish with a wedge of lime.
  • Swap out the sesame seeds for some crushed peanuts for an added crunch!
