Easy Healing Cabbage Tomato Soup Recipe
Easy 1 pot cabbage and tomato soup made with just 10 ingredients. Nourishing and comfoting soup that is so easy to make. Full of flavour for a easy vegan soup recipe.
Ingredients
- 1 head cabbage nappa or savoy, small
- 8 cups vegetable stock
- 4 Roma tomato diced
- 4 celery diced, stalks
- 3 cloves garlic minced
- 1 onion diced
- 2 cups tomato canned or jarred, strained
- ¼ cup lemon juice
- 2 tbsp Italian seasoning
- 1 tablespoon olive oil extra virgin
- 1 teaspoon salt
Instructions
- In a large pot over medium heat sautee the onions in the olive oil. Once soft add in the garlic, celery, and spices and cook for 2 minutes.
- Next add in the fresh and starined tomatoes, veggie broth, and half the cabbage. Cook for about 30 minutes on medium low heat.
- Add in the remaining cabbage and cook for another 10 minutes.
