Easy Homemade Almond Paste (5 Ingredients)

Made with just 5 ingredients and no food processor, this almond paste recipe is quick and easy to make at home. Also known as marzipan, this baking staple is versatile enough to bake into French toast or shape into cake decorations.

Ingredients

  • 1 ½ cups almond flour 114 g
  • 1 ½ cups powdered sugar 180 g
  • ¼ tsp salt
  • 1 large egg white save yolk for another use
  • 1 ½ tsp almond extract 7 mL

  1. Dry Ingredients: In a large bowl, stir together 1 ½ cups almond flour, 1 ½ cups powdered sugar, and ¼ tsp salt.
  2. Add Wet Ingredients: Stir in 1 large egg white and 1 ½ tsp almond extract
  3. Shape: Lay out a piece of plastic wrap (or parchment paper), then transfer the mixture to the center. Shape into a log (about 1 to 2 inches thick), twisting the ends to secure it shut.
  4. Refrigerate: Transfer to the fridge until firm, about 2 hours.
  5. Use: When ready to use, slice the almond paste into rounds (or simply crumble off pieces). Great in cookies, cakes, and pies!

Notes

  • Can I use almond meal? No, this is thicker and doesn't create a great paste-like consistency like almond flour does.
  • Storage: Keep this in the fridge sealed in its plastic wrapped log for up to 2 weeks.
