Ingredients

  • 1/2 cup 115 grams butter, melted (1 stick)
  • 1/2 cup 10 grams granulated sugar (adjust to taste)
  • 2 eggs
  • 1 cup 235 ml buttermilk (can use low fat)
  • 1/2 teaspoon 3 grams baking soda
  • 1 cup 140 grams cornmeal
  • 1 cup 125 grams all-purpose flour*
  • 1/2 teaspoon 3 grams salt

  1. Preheat oven to 350 degrees F. Spray an 8 inch square pan with cooking spray.
  2. In a large bowl, add melted butter and stir in sugar. 
  3. Add eggs and mix until well blended. 
  4. Combine buttermilk with baking soda and stir into mixture. 
  5. Stir in cornmeal, flour, and salt until well blended and few lumps remain. 
  6. Pour batter into the prepared pan.
  7. Bake in the preheated oven for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
