Ingredients
- 4 cups old fashioned rolled oats
- 1 cup nuts pecans, walnuts, cashews, etc.
- 1/2 cup shredded coconut optional
- 1/2 cup olive oil or vegetable oil
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/8 cup brown sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg optional
Instructions
- Preheat the oven to 300 degrees Fahrenheit. Line a baking sheet with parchment paper.
- In a large mixing bowl combine oats, nuts, and coconut together.
- In a separate bowl stir together oil, honey, maple syrup, brown sugar, salt, vanilla extract, cinnamon, and nutmeg (optional). Stir until well combined.
- Pour the wet ingredients over the dry ingredients and mix until coated.
- Spread onto the prepared baking sheet and bake for 30-35 minutes, stirring carefully half way through.
- Let cool completely and break into desired size pieces. Store in an airtight container for up to 6 months.
