Easy Homemade Lobster Bisque

Easy Homemade Lobster Bisque is a creamy soup featuring cooked lobster meat and homemade lobster broth made from shells and aromatics. The broth is combined with vegetables, white wine, and sherry, then pureed and finished with half and half. The lobster pieces fold in at the end for a rich, luxurious texture and delicate seafood flavor, accented by Worcestershire, Tabasco, and herbs.

Ingredients

  • ½ pound lobster meat cooked, with shells if possible
  • ¼ cup butter divided
  • ½ cup onion divided, diced
  • 2 cups chicken broth
  • ½ cup carrot diced
  • ½ cup celery diced
  • 2 cloves garlic minced
  • ⅓ cup white wine
  • ⅓ cup cooking sherry
  • 1 tablespoon Worcestershire sauce
  • 3 dashes Tabasco sauce
  • ¾ teaspoon thyme dried leaves
  • 1 bay leaf
  • 2 ounces tomato paste
  • 1 ½ cups half and half or light cream

Instructions

  1. Remove the meat from the shells and set aside.
  2. Melt 2 tablespoons butter in a large saucepan. Add shells and ¼ cup onion and cook over medium heat until fragrant and lightly browned. Add chicken broth and simmer for 10 minutes, covered. Strain, discard shells, and set the lobster broth aside.
  3. Melt remaining butter over medium heat. Add remaining onion, carrots, celery, and garlic and cook until onion is softened. Add white wine and sherry and cook until almost evaporated. Add Worcestershire and Tabasco sauce and cook until almost evaporated.
  4. Stir in the lobster broth (from step 2), thyme, bay leaf, and tomato paste. Simmer uncovered for 15 minutes or until thickened. Remove bay leaf and use an immersion blender to puree until smooth.
  5. Add in cream and simmer until thickened, about 3-5 minutes, stir in lobster meat, and serve immediately. Garnish with chives if desired.

Notes

  • You can simplify by using lobster broth or lobster base instead of making homemade broth.
  • Shells from cooked lobster add extra flavor if reserved for broth stock.
  • Frozen or canned lobster meat works as a substitute if fresh meat is unavailable.
  • Shrimp can replace or complement lobster meat in this bisque for variety.
  • Season to taste with curry powder, fresh herbs, or hot sauce for personalized flavor adjustments.
