Easy Homemade Vegetable Beef Soup

Hearty herb-filled soup recipe loaded with chunks of beef and your favorite vegetables.

Ingredients

  • 1 lb sirloin steak cut into about 1′′ cubes
  • 1 Tbsp olive oil
  • 1 sweet onion diced
  • 2 celery stalks sliced
  • 1 bell pepper chopped
  • 2 Medium carrots peeled and sliced
  • 2-3 garlic cloves pressed
  • 1 Tsp Italian seasoning
  • 2 Large potatoes diced into small pieces
  • 6 Cups low sodium beef stock
  • 1 14oz can diced tomatoes with juice
  • 1 14oz can tomato sauce
  • 1 Tbsp Worcestershire sauce 
  • 1 Cup chopped green beans fresh or frozen
  • 1 Cup corn fresh or frozen
  • salt and pepper, to taste
  • 2 Tbsp chopped parsley to garnish

Instructions

  1. Heat oil in a large stockpot over medium-high heat. Add cubed steak and cook, stirring frequently, for about 2-3 minutes.
  2. Add in onion, celery, carrots, bell pepper, and garlic, and sauté for about 4-5 minutes, or until veggies soften.
  3. Stir in potatoes, Italian seasoning, broth, diced tomatoes, tomato sauce, and Worcestershire sauce.
  4. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until potatoes and beef are tender.
  5. Add green beans and corn, and cook for a couple of minutes more. Season with salt and pepper, and pour into bowls.
  6. Garnish with fresh chopped parsley and enjoy!
