Easy Hot Pot Broth Recipe

Ingredients

  • 4 4 c stock chicken or veggie
  • 3 3 c filtered water
  • 1-inch 1-inch ginger sliced
  • 2 2 scallions cut into 3-inch pieces
  • 1 1 large dried wood ear about 3 x 2 inches (about 18 g)
  • 2 2 jujubes
  • 2-inch 2-inch daikon radish 2 x 2.5 inch cube
  • 1 1 tsp sichuan peppers
  • 1 1 tbsp kosher salt

Instructions

  1. Wash, cut, prep the ingredients.
  2. In a pot over high heat, combine all the ingredients (except salt): stock, water, ginger, scallions, mushrooms, jujubes, daikon, and Sichuan.
  3. Bring to a boil and lower the temperature until it leaves a simmer. Cover with a lid and let simmer for 20 minutes.
  4. Taste test and add the salt.
  5. Let it simmer for another 10 minutes and serve.
