Easy Instant Pot Mashed Potatoes (No Drain Method)

Creamy mashed potatoes cooked for just 12 minutes in an Instant Pot. This no drain method can be cooked and served right out of the inner insert to keep warm or transfer to a serving bowl.

Ingredients

  • 5 pounds Russet potatoes cleaned, peeled, and cut into cubes
  • 1 cup water or broth
  • 2 teaspoons salt
SEASONINGS
  • 1-2 teaspoons salt adjust for taste (additional to above)
  • 1 teaspoon garlic powder optional
  • ½-1 teaspoons black pepper adjust for taste
  • 1 cup sour cream
  • ½ cup 1 stick unsalted butter
  • ½ cup half-and-half or milk

Instructions

  1. Wash potatoes, peel, and cut in quarters.
  2. Place potatoes in the inner insert of an Instant Pot and add water or broth.
  3. Add 2 teaspoons of salt. Place lid on the Instant Pot and put the valve in the seal position.
  4. Cook on steam or manual setting for 12 minutes.
  5. Carefully release the steam when the timer beeps, and remove the lid.
  6. Potatoes should be fork tender. Mash with a potato masher or hand blender.
  7. In a microwave safe dish or on the stove top in a small pan melt the butter and sour cream together.
  8. Add seasonings to the potatoes and the warmed butter sour cream mixture.
  9. Blend until well combined. Gradually add additional milk until the desired consistency is reached.
  10. Serve with additional toppings; chives, parsley, butter, bacon bits or cheese.

Notes

  • If your potatoes are not tender after 12 minutes, steam for an additional minute.
