Ingredients
- 1 lb uncooked pasta rotini
- ⅓ cup red onion diced (soaked in dressing)
- 1 pint grape tomatoes cut in half
- 1 (6 ounce can) black olives sliced
- 1 cup fresh mozarella cut in half
- 8 oz genoa salami chopped
- ½ cup pepperonicini sliced
- 1 cup Italian dressing
- ⅓ cup parmesan freshly grated
- 2 tbsp parsley diced
Instructions
- Bring a large pot of salted water to a boil. Add the noodles and cook until just past al dente. Drain and rinse the noodles in cold water.
- Add the cooled noodles and fillings into a large bowl.
- Toss the noodles, fillings, and dressing all together.
- Cover and place in refrigerator to allow to chill for at least 2 hours before serving.

- Store in refrigerator in a sealed container for 2-3 days.
