Easy Italian Strawberry Mascarpone Cake

A delicate dessert with the flavors and aromas of spring, Strawberry Mascarpone Cake is fragrant and delicious.This is a quick and easy strawberry cake recipe. Ingredients

  • 500 g mascarpone cheese 2 cups, at room temperature
  • 150 g granulated sugar ¾ cup
  • 120 g flour ~¾ cup, "00"
  • 3 eggs medium size, at room temperature
  • 300 g strawberries 10 oz
  • 1 orange zest or lemon
  • powdered sugar for decoration

  1. Place the mascarpone in a bowl. Mix it with a spatula to soften it a little. Then add the sugar.
  2. Beat with a mixer until smooth. Then add the eggs one by one. Combine the ingredients.
  3. Beat on medium speed for at least 5-6 minutes to get a fluffy, creamy mixture. Now add the orange (or lemon) zest.
  4. Add the sifted flour a little at a time and mix to incorporate.
  5. Wash and chop the strawberries. Add the chopped strawberries to the mixture and mix well.
  6. Pour the mixture into the pan lined with baking paper. Spread the mixture well and level the surface with a spoon.
  7. Bake in a preheated oven at 180°C (350°F) for 50 minutes. Test with a toothpick to ensure it is done.
  8. When baked, the cake will first puff up and then sag a bit. Allow to cool completely before removing from the pan. Dust the cake with powdered sugar. The Mascarpone Strawberry Cake is ready, delicate and flavorful.

Notes

  • NOTE: Doses for a 20 cm (8 inch) non-stick Springform Pan
  • TIPS: This cake is really very easy to make. There are only 2 tricks you must not forget for a perfect success!
  • The eggs and the mascarpone must be at room temperature.
  • Whip the egg and mascarpone mixture - which must incorporate a lot of air - well and for a long time (step 3).
