Easy Lemon Bliss Balls

Ingredients

  • 1 cup raw cashews
  • ½ cup unsweetened shredded coconut plus more for rolling
  • 1 cup pitted dates packed
  • 1 tablespoon lemon zest from approx. 1 large lemon
  • 2 tablespoons lemon juice
  • 2-4 tablespoons water

Instructions

  1. Add everything to your food processor, starting with 2 tablespoons of water. Process until broken down and you have a sticky, well combined mixture. Add more water if needed.
  2. Scoop the batter using a small cookie scoop and roll it into a ball. Place each lemon bliss ball on a plate, baking sheet, or sheet of parchment paper. Repeat with the remaining batter. You will get around 22 energy balls.
  3. Optional: Roll each ball with more shredded coconut using a shallow dish.

Notes

  •  
  • Store the balls airtight in your fridge for up to 5 days, or freeze them for up to 3 months.
  • Don't overprocess the mixture. These lemon balls taste best with a little texture.
  • Zest the lemon before juicing it! And use fresh lemon juice for the best results.
