Ingredients

  • 1 cup sugar
  • ⅛ teaspoon salt
  • 1 ½ ticks butter softened
  • 2 teaspoons lemon zest
  • 6 eggs
  • 1 cup lemon juice

Instructions

  1. Cream together the butter and sugar until smooth.
  2. Add the lemon zest and mix.
  3. Add the eggs one at a time until well combined.
  4. Gradually whisk in the lemon juice until evenly combined.
  5. Cook in a medium saucepan over medium heat.
  6. Bring to a simmer and cook until the temperature reaches 170ºF.
  7. Cool completely.
