Easy Low-Carb Loaded Mashed Cauliflower with Bacon and Cheddar
This cauliflower dish loaded with bacon, cheddar cheese and green onions makes an excellent side dish. It's a low-carb option packed with flavor and ready to go in no time at all!

Ingredients
- 1 large head cauliflower
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- salt and pepper to taste
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ¼ cup Bacon crumbles plus extra for topping
- ¼ cup green onions chopped
- ¼ cup deli jalapeños optional
Instructions
- Cut the cauliflower into florets and add them to a microwave safe bowl. Add 2 tablespoons of water and cover with cling film. Microwave for 6 1/2 minutes, until completely cooked and tender.
- Drain the excess water and let sit uncovered for a minute or two.
- Add the butter, sour cream and seasonings and add the cauliflower to a food blender or use a hand mixer to process until fluffy; mix until it resembles the consistency of mashed potatoes.
- Remove the mashed cauliflower to a glass baking dish and top with the cheddar cheese, bacon and jalapeño slices.
- Place under the broiler to melt the cheese for a few minutes.
- Immediately serve; top with additional green onions, sour cream, bacon, or cheese - however desired.
