Ingredients
- 2 hardboiled eggs – cut in half
- 1/4 cup strawberry yogurt
- 1 Cinnamon Toast
- Fresh fruit
Instructions
- Place the eggs in a single layer at the bottom of a saucepan. Cover completely with water.
- Heat the pot on high heat and bring the water to a full boil.
- Cover the pan with a lid. Turn off the heat but leave the pot on the hot stove. Let it sit for 10 - 12 minutes.
- Strain and run cold water over the eggs to help them cool and prevent them from cooking longer.
- Peel
- For cinnamon toast, take a slice of wheat bread and butter it. Then sprinkle it with cinnamon and sugar recipe. Place it in the oven in the broiler for about 1 – 2 minutes until it starts to get brown. Allow it to cool and then slice it into 3 or 4 pieces.
- Add eggs, cinnamon toast and fruit to lunchbox.

- This lunch is great to make the night before and store in the refrigerator until it’s lunch time the next day. *Any type of yogurt or fruit works great in this easy lunch recipe!
